Ingredients

  • Turmeric - 1 tsp
  • Cloves - 1 tsp
  • Ginger - 1 tsp
  • Coriander - 2 tbsp
  • Pepper - 1 tsp
  • Cumin - 2 tbsp
  • Nutmeg - 0.5 tsp
  • Chili Powder - 1 tsp
  • Cardamom - 10 pieces
  • Cinnamon - 1 pieces

Directions

  • Step 1

    In a dry skillet over medium heat, toast coriander seeds, cumin seeds, cardamom pods, cinnamon stick, cloves, black peppercorns, nutmeg, turmeric, ginger, and chili powder for 2–3 minutes until aromatic.

  • Step 2

    Remove from heat and let cool.

  • Step 3

    Transfer to a spice grinder and grind to a fine powder.

  • Step 4

    Store in an airtight container away from light.

Cook's Notes

For best flavor, keep spices whole until ready to use and toast just before grinding.
