Ingredients

  • Cloves - 1 tsp
  • Coriander - 2 tbsp
  • Cumin - 1 tbsp
  • Nutmeg - 1 tsp
  • Bay Leaves - 2 pieces
  • Cardamom - 10 pieces
  • Cinnamon - 1 pieces
  • Green Peppercorns - 1 tsp

Directions

  • Step 1

    Heat a dry skillet over medium heat.

  • Step 2

    Add coriander seeds, cumin seeds, cardamom pods, cloves, cinnamon stick, peppercorns and bay leaves; toast, stirring, until fragrant, about 2–3 minutes.

  • Step 3

    Remove from heat and let cool.

  • Step 4

    Transfer to a spice grinder, add grated nutmeg.

  • Step 5

    Grind to a fine powder.

  • Step 6

    Store in an airtight container.

Cook's Notes

For extra flavor, toast the spices only until they begin to pop, taking care not to burn them.
