- Vegetable Broth - 600 ml
- Cheddar Cheese - 150 g
- Garlic - 2 cloves
- Milk - 200 ml
- Parsley - 5 g
- Flour - 20 g
- Butter - 30 g
- Broccoli - 400 g
- Pink Peppercorns - to taste
- Onion - 1 pc
- Sea Salt - to taste
Directions
Step 1
Melt 30 g butter in a pot over medium heat.
Step 2
Sauté 1 diced onion and 2 minced garlic cloves until soft.
Step 3
Stir in 20 g flour and cook 1 min.
Step 4
Whisk in 600 ml vegetable broth and 200 ml milk; bring to a simmer.
Step 5
Add 400 g broccoli florets; cook 8 min until tender.
Step 6
Stir in 150 g shredded cheddar until melted.
Step 7
Season with salt & pepper; garnish with 5 g chopped parsley and cheese croutons.
