Ingredients

  • Vegetable Broth - 800 ml
  • Garlic - 2 cloves
  • Tomatoes - 400 g
  • Celery - 1 stalk
  • Zucchini - 1 piece
  • Pasta - 100 g
  • Parsley - 2 tbsp
  • Onion - 1 piece
  • Carrots - 1 piece
  • Salt - 1 to taste
  • Great Northern Beans - 1 cup
  • Olive Oil - 1 tbsp

Directions

  • Step 1

    Dice 1 onion and mince 2 garlic cloves. Chop 1 carrot, 1 celery stalk and 1 zucchini.

  • Step 2

    Heat 1 tbsp olive oil; sauté onion and garlic 3 min.

  • Step 3

    Add carrot, celery and zucchini; cook 5 min.

  • Step 4

    Stir in 800 ml vegetable broth, 400 g diced tomatoes and 1 cup beans; bring to a simmer.

  • Step 5

    Add 100 g pasta; cook 10 min until al dente.

  • Step 6

    Season with salt & pepper.

  • Step 7

    Garnish with 2 tbsp chopped parsley and serve hot.
