Ingredients

  • Vegetable Broth - 1 l
  • Garlic - 3 cloves
  • Himalayan Pink Salt - 1 tsp
  • Fava Beans - 300 g
  • Parsley - 2 tbsp
  • Cilantro - 2 tbsp
  • Pepper - 0.5 tsp
  • Cumin - 1 tsp
  • Lime - 1 piece
  • Chili Powder - 0.5 tsp
  • Paprika - 1 tsp
  • Olive Oil - 2 tbsp

Directions

  • Step 1

    Soak fava beans overnight and drain.

  • Step 2

    Heat olive oil in a pot over medium heat.

  • Step 3

    Sauté minced garlic until fragrant.

  • Step 4

    Add soaked beans and vegetable broth; bring to a boil.

  • Step 5

    Reduce heat and simmer 45 minutes until beans are very soft.

  • Step 6

    Purée until silky smooth.

  • Step 7

    Stir in cumin, paprika, chili powder, salt and pepper.

  • Step 8

    Garnish with chopped parsley, cilantro, a drizzle of olive oil and a lemon wedge.

  • Step 9

    Serve hot.

Cook's Notes

For a smoky note, add a pinch of smoked paprika.
