Start by sautéing onion and garlic in oil, then stir in tomato paste, tomatoes, lentils and spices. Add broth, simmer until lentils are tender, finish with fresh cilantro.

- Lentils - 200 g
- Vegetable Broth - 1 l
- Garlic - 2 cloves
- Tomato Paste - 1 tbsp
- Tomatoes - 400 g
- Cilantro - 2 tbsp
- Onion - 1 piece
- Salt - 1 to taste
- Cumin - 1 tsp
- Chili Powder - 1 tsp
- Olive Oil - 2 tbsp
Directions
Step 1
Heat oil in pot; sauté onion & garlic 3 min.
Step 2
Add tomato paste; cook 1 min.
Step 3
Stir in tomatoes, lentils, cumin & chili powder.
Step 4
Pour in broth; bring to boil.
Step 5
Simmer 15 min until lentils tender.
Step 6
Season with salt & pepper.
Step 7
Garnish with cilantro and serve hot.
