Ingredients
- Vegetable Broth - 1 l
- Garlic - 3 cloves
- Potatoes - 2 pcs
- Celery - 2 stalks
- Butternut Squash - 300 g
- Tomato Sauce - 400 ml
- Onion - 1 pc
- Carrots - 2 pcs
- Salt - 1 tsp
- Pepper - 0.5 tsp
- Cannellini Beans - 400 g
- Olive Oil - 2 tbsp
- Basil - 10 leaves
Directions
Step 1
In a large pot, heat olive oil over medium heat.
Step 2
Add chopped onion, carrot, potato, celery and garlic; sauté until softened.
Step 3
Stir in diced butternut squash, cannellini beans and tomato sauce.
Step 4
Pour in water or vegetable broth, bring to a boil, then reduce heat and simmer for 30–40 minutes.
Step 5
Season with salt, pepper and chopped basil.
Step 6
Serve hot with crusty bread.
Cook's Notes
For extra depth, add a Parmesan rind while simmering (remove before serving).
