Ingredients
- Milk - 1 l
- Kefir - 2 tbsp
Directions
Step 1
Pour the milk into a clean glass jar.
Step 2
Add the kefir grains and stir gently.
Step 3
Cover the jar with a breathable cloth and secure with a rubber band.
Step 4
Let ferment at room temperature (20–24 °C) for 12–24 hours, tasting periodically for desired tartness.
Step 5
Strain the kefir through a plastic or nylon sieve into a clean container, reserving the grains.
Step 6
Refrigerate the strained kefir and reuse the grains for the next batch.
Cook's Notes
Use filtered, non-chlorinated milk and avoid metal utensils when handling the grains.
