- Garlic - 4 cloves
- Celery - 2 stalks
- Water - 4 l
- Beef - 2 kg
- Parsley - 2 sprigs
- Onion - 1 pieces
- Carrots - 2 pieces
- Pepper - 10 pieces
- Sea Salt - 1 tsp
- Bay Leaves - 2 pieces
- Vinegar - 2 tbsp
Directions
Step 1
Preheat the oven to 200°C (400°F).
Step 2
Place the bones on a baking sheet and roast for 30 minutes until browned.
Step 3
Transfer the roasted bones to a large pot; add water and vinegar.
Step 4
Bring to a gentle simmer, skimming any foam on the surface.
Step 5
Reduce heat to low and cook, covered, for 12 hours, adding water as needed to keep bones submerged.
Step 6
In the last hour, add carrots, celery, onion, garlic, parsley, bay leaves, and peppercorns.
Step 7
Strain the broth through a fine-mesh sieve; season with salt.
Step 8
Let cool slightly before serving or storing.
Cook's Notes
For deeper flavor, roast the bones well and use a mix of marrow and joint bones. Store cooled broth in airtight containers for up to 5 days in the fridge or freeze for later use.
