Split Pea Soup
Hearty, nutritious soup made with green split peas, vegetables and herbs.
This simple vegetarian split pea soup starts by sautéing onion, garlic and carrots in olive oil, then simmering split peas in vegetable broth with bay leaf and thyme until creamy. Purée to desired consistency and garnish with parsley.

Ingredients
- Vegetable Broth - 800 ml
- Garlic - 2 cloves
- Thyme - 2 sprigs
- Peas - 250 g
- Parsley - 2 tbsp
- Onion - 1 piece
- Rainbow Carrots - 200 g
- Salt - 1 to taste
- Bay Leaves - 1 piece
- Olive Oil - 1 tbsp
Directions
Step 1
Dice 1 onion and mince 2 garlic cloves.
Step 2
Peel and slice 200 g carrots.
Step 3
Heat 1 tbsp olive oil in a pot; sauté onion, garlic and carrots 5 min.
Step 4
Add 250 g split peas, 800 ml vegetable broth, 1 bay leaf and 2 sprigs of thyme; bring to a boil.
Step 5
Reduce heat and simmer 40 min, stirring occasionally.
Step 6
Remove bay leaf and thyme stems; purée half the soup for creaminess.
Step 7
Season with salt & pepper to taste.
Step 8
Garnish with 2 tbsp chopped parsley and serve hot.
