Vegan Mushroom Soup
A velvety, warming vegan soup of mushrooms and aromatics.
This simple vegan soup sautés mushrooms, onion and garlic in olive oil, then simmers in vegetable broth until tender. A splash of coconut milk makes it luxuriously creamy.

Ingredients
- Vegetable Broth - 800 ml
- Garlic - 2 cloves
- Parsley - 2 tbsp
- Mushrooms - 400 g
- Onion - 1 piece
- Salt - 1 to taste
- Olive Oil - 1 tbsp
- Coconut Milk - 200 ml
Directions
Step 1
Slice 400 g mushrooms, dice 1 onion, mince 2 garlic cloves.
Step 2
Heat 1 tbsp olive oil in a pot; sauté onion and garlic until soft, 3 min.
Step 3
Add mushrooms; cook until they release their juices, 5 min.
Step 4
Pour in 800 ml vegetable broth bring to a boil.
Step 5
Reduce heat and simmer 10 min.
Step 6
Stir in 200 ml coconut milk; heat through without boiling.
Step 7
Season with salt & pepper to taste. Garnish with 2 tbsp chopped parsley.
