Ingredients

  • Vegetable Broth - 600 ml
  • Garlic - 2 cloves
  • Himalayan Pink Salt - 1 tsp
  • Celery - 2 stalks
  • Green Onions - 2 stalks
  • Ginger - 1 tsp
  • Bok Choy - 150 g
  • Onion - 1 pc
  • Carrots - 2 pc
  • Pepper - 0.5 tsp
  • Shiitake Mushrooms - 100 g
  • Soy Sauce - 2 tbsp
  • Olive Oil - 2 tbsp

Directions

  • Step 1

    Heat 2 tbsp olive oil in a pot over medium heat.

  • Step 2

    Sauté 1 chopped onion, 2 sliced carrots and 2 chopped celery stalks until softened.

  • Step 3

    Add 2 cloves minced garlic and 1 tsp grated ginger; cook 1 minute.

  • Step 4

    Stir in 600 ml vegetable broth and 2 tbsp soy sauce; bring to a simmer.

  • Step 5

    Add 150 g bok choy and 100 g shiitake mushrooms; simmer 5 minutes.

  • Step 6

    Season with salt and pepper to taste.

  • Step 7

    Garnish with chopped green onions and serve hot.

Cook's Notes

For extra depth, finish with a drizzle of toasted sesame oil.
