- Vegetable Broth - 600 ml
- Garlic - 2 cloves
- Himalayan Pink Salt - 1 tsp
- Celery - 2 stalks
- Green Onions - 2 stalks
- Ginger - 1 tsp
- Bok Choy - 150 g
- Onion - 1 pc
- Carrots - 2 pc
- Pepper - 0.5 tsp
- Shiitake Mushrooms - 100 g
- Soy Sauce - 2 tbsp
- Olive Oil - 2 tbsp
Directions
Step 1
Heat 2Â tbsp olive oil in a pot over medium heat.
Step 2
Sauté 1 chopped onion, 2 sliced carrots and 2 chopped celery stalks until softened.
Step 3
Add 2Â cloves minced garlic and 1Â tsp grated ginger; cook 1Â minute.
Step 4
Stir in 600Â ml vegetable broth and 2Â tbsp soy sauce; bring to a simmer.
Step 5
Add 150Â g bok choy and 100Â g shiitake mushrooms; simmer 5Â minutes.
Step 6
Season with salt and pepper to taste.
Step 7
Garnish with chopped green onions and serve hot.
Cook's Notes
For extra depth, finish with a drizzle of toasted sesame oil.
