Ingredients
- Vegetable Broth - 1 l
- Potatoes - 500 g
- Parsley - 2 tbsp
- Leeks - 1 piece
- Onion - 1 piece
- Carrots - 2 pieces
- Pepper - 1 to taste
- Sea Salt - 1 to taste
- Heavy Cream - 100 ml
Directions
Step 1
Peel and dice potatoes and carrots. Chop leek and onion.
Step 2
In a large pot, sauté onion and leek in a little oil until soft.
Step 3
Add potatoes and carrots, cover with vegetable broth, season with salt and pepper.
Step 4
Bring to a boil, then simmer 20–25 minutes until vegetables are tender.
Step 5
Blend half the soup for extra creaminess, return to pot.
Step 6
Stir in cream and chopped parsley, heat through.
Step 7
Serve hot, garnished with extra parsley.
Cook's Notes
For a smoother texture, blend half of the soup before adding the cream.
