Ingredients
- Vegetable Broth - 4 cups
- Garlic - 2 cloves
- Onion - 1 piece
- Salt - 1 to taste
- Lime - 1 tbsp
- Kale - 100 g
- Great Northern Beans - 2 cups
- Olive Oil - 1 tbsp
Directions
Step 1
Heat 1 tbsp olive oil in a pot over medium heat; sauté 1 diced onion and 2 minced garlic cloves until translucent.
Step 2
Stir in 2 cups cooked white beans and 4 cups vegetable broth.
Step 3
Bring to a gentle simmer and cook 10 min.
Step 4
Add 100 g chopped kale; cook 5 min until wilted.
Step 5
Season with salt, pepper and 1 tbsp lemon juice.
Step 6
Serve hot.
