Ingredients

  • Lentils - 200 g
  • Vegetable Broth - 800 ml
  • Garlic - 3 cloves
  • Tomato Paste - 1 tbsp
  • Himalayan Pink Salt - 1 tsp
  • Berbere Spice - 1 tbsp
  • Cilantro - 2 tbsp
  • Onion - 1 pc
  • Pepper - 0.5 tsp
  • Lime - 1 piece
  • Olive Oil - 2 tbsp

Directions

  • Step 1

    Rinse red lentils until water runs clear and drain.

  • Step 2

    Heat olive oil in a pot over medium heat.

  • Step 3

    Sauté chopped onion and minced garlic until softened.

  • Step 4

    Add berbere spice and tomato paste; cook 1 minute.

  • Step 5

    Stir in lentils and vegetable broth; bring to a boil.

  • Step 6

    Reduce heat and simmer 25 minutes until lentils are tender.

  • Step 7

    Season with salt and stir in chopped cilantro.

  • Step 8

    Serve hot with a lemon wedge.
