Ingredients
- Parsley - 1 tbsp
- Ginger - 30 g
- Onion - 1 pc
- Carrots - 500 g
- Sea Salt - 1 tsp
- Chicken Broth - 1 l
- Olive Oil - 2 tbsp
Directions
Step 1
Heat olive oil in a pot.
Step 2
Add chopped onion; sauté until translucent.
Step 3
Stir in carrots and ginger; cook 2 minutes.
Step 4
Pour in broth; bring to a boil.
Step 5
Reduce heat and simmer until carrots are tender.
Step 6
Blend until smooth.
Step 7
Season with salt.
Step 8
Serve garnished with chopped parsley.
