Ingredients

  • Parsley - 1 tbsp
  • Ginger - 30 g
  • Onion - 1 pc
  • Carrots - 500 g
  • Sea Salt - 1 tsp
  • Chicken Broth - 1 l
  • Olive Oil - 2 tbsp

Directions

  • Step 1

    Heat olive oil in a pot.

  • Step 2

    Add chopped onion; sauté until translucent.

  • Step 3

    Stir in carrots and ginger; cook 2 minutes.

  • Step 4

    Pour in broth; bring to a boil.

  • Step 5

    Reduce heat and simmer until carrots are tender.

  • Step 6

    Blend until smooth.

  • Step 7

    Season with salt.

  • Step 8

    Serve garnished with chopped parsley.

For extra depth, add a pinch of cumin or a squeeze of lemon juice before serving.
