Tom Kha Gai is a classic Thai soup made by simmering chicken and aromatic herbs in coconut milk and broth, flavored with galangal, lemongrass, kaffir lime leaves and chili.

Ingredients

  • Chili Flakes - 1 tsp
  • Chicken Breast - 300 g
  • Mushrooms - 100 g
  • Cilantro - 2 tbsp
  • Fish Sauce - 2 tbsp
  • Lime - 2 tbsp
  • Chicken Broth - 500 ml
  • Galangal - 5 slices
  • Kaffir Lime Leaves - 6 leaves
  • Lemongrass - 2 stalks
  • Coconut Milk - 400 ml

Directions

  • Step 1

    In a pot, combine 400 ml coconut milk and 500 ml chicken broth; heat over medium.

  • Step 2

    Add 5 galangal slices, 2 bruised lemongrass stalks and 6 kaffir lime leaves; bring to a gentle boil.

  • Step 3

    Stir in 300 g thinly sliced chicken breast and 100 g sliced mushrooms; simmer 5 min.

  • Step 4

    Season with 2 tbsp fish sauce, 2 tbsp lime juice and 1 tsp chili flakes.

  • Step 5

    Remove from heat, garnish with 2 tbsp chopped cilantro and serve hot.

Cook's Notes

Adjust the heat with more or fewer chili flakes as desired.
