Ingredients
- Lemon Basil - 10 leaves
- Vegetable Broth - 500 ml
- Garlic - 2 cloves
- Tomatoes - 800 g
- Onion - 1 piece
- Salt - 1 to taste
- Pepper - 1 to taste
- Heavy Cream - 50 ml
- Olive Oil - 2 tbsp
Directions
Step 1
Dice 1 onion and mince 2 garlic cloves.
Step 2
Heat 2 tbsp olive oil in a pot; sauté onion and garlic 3 min until translucent.
Step 3
Add 800 g chopped tomatoes and 500 ml vegetable broth; bring to a gentle boil.
Step 4
Reduce heat and simmer 15 min.
Step 5
Stir in 10 basil leaves and purée until smooth.
Step 6
Season with salt & pepper.
Step 7
Swirl in 50 ml cream (optional) and serve hot.
