Carrot & Ginger Soup

A velvety, warming soup of carrots and ginger, perfect for any season.

Sauté carrots, onion and ginger in olive oil until fragrant, then simmer in broth until tender. Purée until smooth and finish with a touch of cream or milk for extra silkiness.

Ingredients

  • Vegetable Broth - 800 ml
  • Ginger - 1 tbsp
  • Onion - 1 piece
  • Rainbow Carrots - 400 g
  • Pepper - 1 to taste
  • Sea Salt - 1 to taste
  • Heavy Cream - 100 ml
  • Olive Oil - 1 tbsp

Directions

  • Step 1

    Dice 1 onion and mince 1 tbsp fresh ginger. Slice 400 g carrots.

  • Step 2

    In a pot, heat 1 tbsp olive oil; sauté onion, ginger and carrots 5 min.

  • Step 3

    Add 800 ml vegetable broth; simmer 15 min until carrots are very soft.

  • Step 4

    Purée with an immersion blender until smooth.

  • Step 5

    Stir in 100 ml heavy cream or milk; heat through without boiling.

  • Step 6

    Season with salt & pepper.

  • Step 7

    Serve hot, garnished with a swirl of cream.
