Ingredients
- Vegetable Broth - 500 ml
- Garlic - 2 cloves
- Tomatoes - 800 g
- Milk - 200 ml
- Flour - 15 g
- Pink Peppercorns - to taste
- Onion - 1 pc
- Oregano - 1 tsp
- Sea Salt - to taste
- Olive Oil - 2 tbsp
Directions
Step 1
Heat 2 tbsp olive oil in a pot over medium heat.
Step 2
Sauté 1 diced onion and 2 minced garlic cloves until soft.
Step 3
Add 800 g chopped tomatoes; cook 5 min.
Step 4
Stir in 15 g flour; cook 1 min.
Step 5
Gradually whisk in 500 ml vegetable broth and 200 ml milk; bring to a gentle simmer for 8 min.
Step 6
Blend until smooth; return to pot.
Step 7
Stir in 1 tsp oregano, season with salt & pepper.
Step 8
Serve warm with croutons or grilled cheese fingers.
