Mexican Tortilla Soup

This Mexican tortilla soup starts by sautéing aromatics, then simmers tomatoes and chipotles in broth until rich. Finish with tortilla strips, cilantro and a squeeze of lime.

Ingredients
- Vegetable Broth - 1000 ml
- Garlic - 3 cloves
- Tomatoes - 400 g
- Cilantro - 2 tbsp
- Onion - 1 piece
- Salt - 1 to taste
- Cumin - 1 tsp
- Lime - 2 tbsp
- Chipotle Peppers - 2 pieces
- Tortillas - 4 strips
Directions
Step 1
Dice 1 onion and mince 3 garlic cloves.
Step 2
In a pot, heat 1 tbsp olive oil; sauté onion and garlic until translucent.
Step 3
Add 400 g chopped tomatoes and 2 chipotle peppers; cook 3 min.
Step 4
Pour in 1000 ml vegetable broth; season with 1 tsp cumin.
Step 5
Simmer 15 min.
Step 6
Stir in 4 strips of tortilla and heat 2 min.
Step 7
Ladle into bowls, garnish with 2 tbsp chopped cilantro and 2 tbsp lime juice.
Step 8
Season with salt & pepper to taste.
