Ingredients
- Kombucha - 1 pc
- Kombucha - 200 ml
- Water - 1 l
- Tea Leaves - 4 tbsp
- Sugar - 50 g
Directions
Step 1
Bring water to a boil; remove from heat.
Step 2
Stir in sugar until dissolved. Add tea leaves and steep 5 minutes.
Step 3
Strain out tea leaves and let sweet tea cool to room temperature (~20 °C).
Step 4
Pour cooled tea into a glass jar, add kombucha starter liquid and gently float the SCOBY on top.
Step 5
Cover jar with a breathable cloth and secure with a rubber band.
Step 6
Ferment at room temperature (20–25 °C) for 7–10 days, tasting periodically.
Step 7
Once desired tanginess is reached, remove SCOBY and reserve for next batch.
Step 8
Bottle kombucha, refrigerate, and enjoy chilled.
Cook's Notes
Ensure tea is fully cooled before adding SCOBY to avoid killing the culture; use filtered water to prevent chlorine interference.
