Pita Bread

Ingredients
- Active Dry Yeast - 2.25 tsp
- Water - 1.25 cups
- Bread Flour - 3 cups
- Salt - 1 tsp
- Sugar - 1 tbsp
- Olive Oil - 1 tbsp
Directions
Step 1
In a bowl, dissolve 2¼ tsp active dry yeast and 1 tbsp sugar in 1¼ cups warm water; let sit 5 minutes.
Step 2
Add 3 cups bread flour, 1 tsp salt, and 1 tbsp olive oil; stir until a shaggy dough forms.
Step 3
Turn onto a lightly floured surface and knead 5–7 minutes until smooth.
Step 4
Place in an oiled bowl, cover, and let rise until doubled, about 1 hour.
Step 5
Preheat oven to 250 °C (480 °F) with a baking stone or sheet inside.
Step 6
Divide dough into 8 balls, roll each into a 15 cm circle.
Step 7
Bake on the hot surface 3–5 minutes until puffed and lightly golden.
Step 8
Remove and let cool briefly before serving.
