Ingredients
- Vegetable Broth - 500 ml
- Garlic - 2 cloves
- Milk - 500 ml
- Flour - 2 tbsp
- Butter - 2 tbsp
- Broccoli - 300 g
- Onion - 1 piece
- Salt - 1 to taste
- Colby Cheese - 150 g
Directions
Step 1
Melt 2 tbsp butter in a pot; stir in 2 tbsp flour to make a roux.
Step 2
Gradually whisk in 500 ml milk; cook until thickened.
Step 3
Add 300 g broccoli florets and 500 ml vegetable broth; simmer 15 min.
Step 4
Stir in 150 g shredded Colby cheese until melted.
Step 5
Season with salt & pepper.
Step 6
Serve hot, garnished with extra cheese or chopped chives.
Cook's Notes
For a smoother texture, blend half the soup before adding the cheese.
