This comforting minestrone starts by sautéing onion, garlic and carrots in olive oil, then simmering beans, tomatoes and thyme in broth. Pasta is added at the end for a satisfying finish.

Ingredients
- Vegetable Broth - 1 l
- Garlic - 3 cloves
- Tomatoes - 400 g
- Thyme - 1 tsp
- Pasta - 100 g
- Parsley - 2 tbsp
- Onion - 1 pc
- Rainbow Carrots - 300 g
- Salt - 1 to taste
- Great Northern Beans - 300 g
- Olive Oil - 2 tbsp
Directions
Step 1
Heat olive oil in a large pot over medium heat. Sauté diced onion, garlic and carrots until softened.
Step 2
Stir in chopped tomatoes, drained beans and thyme.
Step 3
Pour in vegetable broth and bring to a gentle boil.
Step 4
Reduce heat and simmer 20 min.
Step 5
Add pasta and cook until al dente, about 8 min.
Step 6
Season with salt & pepper.
Step 7
Garnish with chopped parsley and serve hot.
