Ingredients

  • Vegetable Broth - 500 ml
  • Garlic - 2 cloves
  • Tomatoes - 400 g
  • Milk - 200 ml
  • Parsley - 2 tbsp
  • Butter - 50 g
  • Onion - 1 pc
  • Salt - 1 to taste

Directions

  • Step 1

    Dice 1 onion and mince 2 garlic cloves.

  • Step 2

    In a pot, melt 50 g butter; sauté onion and garlic until soft.

  • Step 3

    Add 400 g chopped tomatoes and 500 ml broth; simmer 15 min.

  • Step 4

    Blend until smooth, return to pot.

  • Step 5

    Stir in 200 ml milk and heat through without boiling.

  • Step 6

    Season with salt & pepper to taste.

  • Step 7

    Serve hot, garnished with chopped parsley.

Cook's Notes

Serve with crusty bread for dipping.
