Ingredients
- Garlic - 2 cloves
- Karela (Bitter Melon) - 1 to taste
- Celery - 2 stalks
- Onion - 1 pc
- Carrots - 2 pcs
- Sea Salt - 1 l
- Kale - 150 g
- Great Northern Beans - 400 g
- Olive Oil - 2 tbsp
Directions
Step 1
In a large pot, heat olive oil over medium heat. Sauté onion, garlic, carrots, and celery until softened.
Step 2
Stir in beans and vegetable broth. Bring to a simmer and cook 20 minutes.
Step 3
Add kale and cook until wilted, about 5 minutes. Season with salt and pepper.
Step 4
Serve hot, with crusty bread on the side.
