Spicy Red Lentil Soup
A hearty, flavorful soup of red lentils and warming spices.
This North American–style soup sautés onion, garlic, ginger and spices, then simmers red lentils in broth until creamy. Finished with coconut milk and fresh cilantro.

Ingredients
- Lentils - 200 g
- Vegetable Broth - 800 ml
- Chili Flakes - 0.5 tsp
- Garlic - 2 cloves
- Ginger - 1 tsp
- Cilantro - 2 tbsp
- Onion - 1 piece
- Rainbow Carrots - 300 g
- Salt - 1 to taste
- Cumin - 1 tsp
- Olive Oil - 1 tbsp
- Coconut Milk - 100 ml
Directions
Step 1
Dice 1 onion and mince 2 garlic cloves. Grate 1 tsp ginger.
Step 2
Heat 1 tbsp olive oil in a pot; sauté onion, garlic, ginger 5 min.
Step 3
Add 1 tsp cumin and ½ tsp chili flakes; cook 1 min.
Step 4
Stir in 200 g red lentils and 800 ml vegetable broth; bring to boil.
Step 5
Reduce heat and simmer 20 min, stirring occasionally.
Step 6
Blend half the soup for creaminess, return to pot.
Step 7
Stir in 100 ml coconut milk; season with salt & pepper.
Step 8
Garnish with chopped cilantro and serve hot.
Cook's Notes
For extra depth, squeeze in lime juice before serving.
