Ingredients

  • Vegetable Broth - 800 ml
  • Garlic - 2 cloves
  • Cornstarch - 20 g
  • Milk - 200 ml
  • Parsley - 2 tbsp
  • Butter - 30 g
  • Broccoli - 500 g
  • Onion - 1 piece
  • Salt - 1 to taste
  • Blue Cheese - 150 g

Directions

  • Step 1

    Dice 1 onion and mince 2 garlic cloves.

  • Step 2

    In a pot, melt 30 g butter; sauté onion and garlic until fragrant, 3 min.

  • Step 3

    Stir in 20 g flour; cook 1 min.

  • Step 4

    Add 500 g broccoli florets and 800 ml vegetable broth; bring to a simmer and cook 10 min.

  • Step 5

    Purée half the soup for texture, return to pot.

  • Step 6

    Stir in 150 g grated cheddar and 200 ml milk; heat through without boiling.

  • Step 7

    Season with salt & pepper; garnish with chopped parsley.
