Ingredients

  • Vegetable Broth - 800 ml
  • Garlic - 3 cloves
  • Tomato Paste - 1 tbsp
  • Himalayan Pink Salt - 1 tsp
  • Berbere Spice - 1 tbsp
  • Ginger - 1 tsp
  • Cilantro - 2 tbsp
  • Onion - 1 pc
  • Pepper - 0.5 tsp
  • Lime - 1 piece
  • Olive Oil - 2 tbsp
  • Chickpea Flour - 100 g

Directions

  • Step 1

    Heat olive oil in a pot over medium heat.

  • Step 2

    Sauté chopped onion, minced garlic and grated ginger until softened.

  • Step 3

    Stir in berbere spice and chickpea flour; cook 1 minute.

  • Step 4

    Gradually whisk in vegetable broth, bringing to a gentle simmer.

  • Step 5

    Cook, stirring, until thickened (about 15 minutes).

  • Step 6

    Season with salt and pepper, stir in chopped cilantro.

  • Step 7

    Serve hot with injera or flatbread.

Cook's Notes

Adjust berbere to taste and serve with a squeeze of lemon for brightness.
