Creamy Potato & Leek Soup

This classic soup combines sautéed leeks and onions with tender potatoes in a creamy broth. Blended until smooth, it's warm and comforting for all ages.

Ingredients
- Vegetable Broth - 500 ml
- Garlic - 2 cloves
- Potatoes - 500 g
- Milk - 500 ml
- Parsley - 2 tbsp
- Flour - 2 tbsp
- Leeks - 3 pcs
- Butter - 2 tbsp
- Onion - 1 pc
- Salt - 1 to taste
Directions
Step 1
Melt 2 tbsp butter in a pot over medium heat.
Step 2
Add 1 diced onion, 2 minced garlic cloves and 3 sliced leeks; sauté 5 min until softened.
Step 3
Stir in 2 tbsp flour and cook 1 min.
Step 4
Gradually whisk in 500 ml milk and 500 ml vegetable broth; bring to a simmer.
Step 5
Add 500 g diced potatoes and cook 15 min until tender.
Step 6
Purée until smooth.
Step 7
Season with salt & pepper, garnish with 2 tbsp chopped parsley and serve hot.
Cook's Notes
For extra richness, stir in 50 ml cream before blending.
