This curry paste brings together sautéed onion, garlic and ginger with warm spices and tomato paste to form a richly flavored foundation for any curry.

Ingredients
- Garlic - 4 cloves
- Tomato Paste - 2 tbsp
- Turmeric - 1 tsp
- Water - 2 tbsp
- Vegetable Oil - 2 tbsp
- Ginger - 1 tbsp
- Coriander - 1 tsp
- Onion - 1 pc
- Salt - 1 to taste
- Cumin - 1 tsp
- Chili Powder - 1 tbsp
Directions
Step 1
Peel and roughly chop 1 onion, 4 garlic cloves and 1 tbsp grated ginger.
Step 2
Heat 2 tbsp oil in a skillet over medium heat; sauté onion, garlic and ginger until soft, about 5 minutes.
Step 3
Stir in 1 tsp ground cumin, 1 tsp ground coriander, 1 tsp turmeric and 1 tbsp chili powder; cook 1 minute.
Step 4
Add 2 tbsp tomato paste and 2 tbsp water; cook 2–3 minutes until fragrant.
Step 5
Transfer to a blender and puree to a smooth paste.
Step 6
Cool and store in the refrigerator up to 2 weeks.
Cook's Notes
For deeper flavor, lightly toast the spices in the dry skillet before adding the aromatics.
