Oyster sauce is a rich, savory condiment prepared by simmering oysters with soy sauce, sugar, and water, then thickening with cornstarch to create a glossy, umami-packed sauce.

Ingredients
- Oysters - 250 g
- Cornstarch - 1 tsp
- Water - 30 ml
- Water - 200 ml
- Salt - 1 to taste
- Sugar - 1 tsp
- Soy Sauce - 1 tbsp
Directions
Step 1
Rinse and shuck 250 g oysters (reserve the oyster liquor) and chop the oysters coarsely.
Step 2
Combine oysters and 200 ml water in a small saucepan and bring to a gentle simmer over medium heat.
Step 3
Cook for 5 minutes until oysters are cooked and the liquid slightly reduced.
Step 4
Strain the mixture through a fine mesh, pressing to extract all juices, discarding solids.
Step 5
Return the liquid to the saucepan, add 1 tbsp soy sauce, 1 tsp sugar, and salt to taste.
Step 6
Stir in the cornstarch slurry (1 tsp cornstarch mixed with 30 ml water) and simmer 1–2 minutes until thickened.
Step 7
Remove from heat, let cool, and transfer to a clean jar. Store in the refrigerator.
Cook's Notes
For best texture, use fresh oysters and strain the sauce well to remove any solids.
