- Maple Water - 4 liters
Directions
Step 1
Pour 4 L of pure maple water into a large, heavy-bottomed pot.
Step 2
Bring to a gentle boil over medium-high heat, skimming off any foam from the surface.
Step 3
Reduce heat to medium-low and simmer uncovered, stirring occasionally, until the liquid reduces by about 90% and reaches 104 °C on a candy thermometer (about 240 minutes).
Step 4
Remove from heat and let cool slightly; syrup will thicken as it cools.
Step 5
Strain through a fine mesh or cheesecloth into sterilized glass jars and seal while hot.

Use a candy thermometer for precise doneness, and store syrup in the fridge for up to 6 months.
