Cashew cream is a versatile, dairy-free alternative made by simply blending soaked cashews with water, a touch of lemon juice, and salt until completely smooth.

Ingredients
- Lemon Juice - 1 tbsp
- Water - 0.5 cup
- Cashews - 1 cup
- Salt - 0.25 tsp
Directions
Step 1
Soak the cashews in water for at least 4 hours (or overnight).
Step 2
Drain and rinse the cashews.
Step 3
In a blender, combine cashews, water, lemon juice, and salt.
Step 4
Blend on high until velvety and smooth, pausing to scrape down the sides if needed.
Step 5
Use immediately, or store in an airtight container in the refrigerator for up to 5 days.
Cook's Notes
For extra-silky cream, rinse the blender with a splash of cold water and reblend for a few seconds.
