Ingredients
- Garlic - 2 cloves
- Himalayan Pink Salt - 1 tsp
- Lemon Juice - 0.33 cup
- Chickpeas - 2 cups
- Olive Oil - 2 tbsp
- Tahini - 0.25 cup
Directions
Step 1
Drain and rinse the chickpeas, reserving one tablespoon of the liquid.
Step 2
In a food processor, combine chickpeas, tahini, garlic, lemon juice and salt; process until smooth.
Step 3
With the motor running, drizzle in olive oil until creamy.
Step 4
If the hummus is too thick, add the reserved liquid one tablespoon at a time and blend until desired consistency is reached.
Step 5
Transfer to a serving dish, drizzle with olive oil and serve.
Cook's Notes
For extra-smooth hummus, peel the chickpeas before blending and use ice-cold water when adjusting consistency.
