Ingredients
- Garlic - 3 cloves
- Tomato Paste - 2 tbsp
- Tomatoes - 800 g
- Parsley - 2 tbsp
- Onion - 1 pc
- Sea Salt - 1 tsp
- Bay Leaves - 2 pc
- Olive Oil - 2 tbsp
- Demerara Sugar - 1 tsp
- Basil - 10 leaves
Directions
Step 1
Heat the olive oil in a saucepan over medium heat.
Step 2
Add the chopped onion and minced garlic; sauté until golden, about 5 minutes.
Step 3
Stir in the diced tomatoes and tomato paste.
Step 4
Add the basil leaves, bay leaves, salt, and sugar.
Step 5
Bring to a simmer, then reduce heat and cook gently for 30 minutes, stirring occasionally.
Step 6
Remove the bay leaves before serving or storing.
Cook's Notes
For extra richness, stir in a little additional olive oil just before serving.
