Harissa is made by toasting spices and blending them with chili powder, garlic, olive oil, and lemon juice to create a fragrant, spicy paste.

Ingredients
- Garlic - 6 cloves
- Lemon Juice - 15 ml
- Coriander - 1 tsp
- Salt - 1 to taste
- Cumin - 1 tsp
- Chili Powder - 50 g
- Caraway Seeds - 1 tsp
- Olive Oil - 60 ml
Directions
Step 1
In a dry skillet over medium heat, toast 1 tsp cumin seeds, 1 tsp coriander seeds, and 1 tsp caraway seeds until fragrant, about 2 minutes; let cool and grind to a powder.
Step 2
In a bowl, combine 50 g chili powder, the ground spice mix, 6 minced garlic cloves, 60 ml olive oil, and 15 ml lemon juice; season with salt to taste.
Step 3
Stir into a smooth paste.
Step 4
Transfer to a jar, let rest 1 hour to develop flavor.
Step 5
Store in the refrigerator up to 2 weeks.

For deeper flavor, allow the paste to sit at room temperature overnight before refrigerating.
