Keto Zucchini Fritters with Feta and Mint
Crispy fritters made from grated zucchini, egg, feta, coconut flour, and fresh mint – a perfect low-carb snack.
Grate 2 medium zucchinis. In a bowl, combine the grated zucchini with 1 beaten egg, 50 grams of crumbled feta cheese, and 2 tablespoons of coconut flour. Add salt (0.25 tsp) and black pepper (0.25 tsp) and mix in 5 grams of finely chopped fresh mint. Heat 1 tablespoon of olive oil in a non-stick skillet and spoon the mixture into small patties. Cook over medium heat for about 4-5 minutes per side until golden and crispy. Drain on paper towels and serve warm.
